7 Miles and Wild Thyme

I don’t know about you guys but I had an GREAT Saturday!  I woke up nice and early for my long run of the week.  At 6:20 and had a big glass of water and a slice of whole wheat toast with peanut butter.  After letting my stomach settle some I headed to the gym for my long run. I have to eat something before running or I get really light headed.  I am still searching for the perfect pre-run breakfast that will give me the fuel I need without upsetting my stomach.

I ran 7 miles on the treadmill.  I was really happy with how I was feeling during todays run, other than a quick breather after mile 4 I was able to keep a 10 min mile the whole time. Until the treadmill decided that an hour was enough of a workout and automatically started on cool down.  I was feeling really good and really into the music and bummed I had to stop and wait for the treadmill to let me restart it.

I had eaten toast before the gym but I was crazy hungry after my run!  I came home and dove into a big bowl of pumpkin spice oats and more nut butter.  Yum! IMG_0406After my second breakfast I studied most of the day, nothing new there.  I have been spending so much time on my school work, I really hope it pays off.  I was hungry again early afternoon and had a yogurt bowl with apple, raspberry Chobani, ground flax and museli.  This combo will never get old!

The second best part of my day was a dinner date at Wild Thyme.  The best part was feeling good after finishing my run! Thanks to my wonderful mom for the gift certificate  Wild Thyme is a cooking school in Lexington where you get to go and make your own meals. The theme was cooking with bourbon.  There was bourbon in the salad, appetizer, main meal and dessert!

They had such a cool set up!  The facility is gorgeous and every couple/group had there own table to work at. IMG_0415 IMG_0416

The salad was spinach, arugala, apples, beets, goat cheese, pistachios and a vinaigrette  It was really good and I was surprised how easy it was to make the bourbon vinaigrette. IMG_0421After the salad we made a shrimp and asparagus appetizer served with bourbon glaze.   The shrimp was put into a food processor with spices and bread crumbs and then wrapped around the asparagus.  This was good, but I would have preferred if we had baked instead of fried them.IMG_0422 IMG_0432Our main meal was wild rice, rainbow swiss chard, and pork loins.  Of course there was bourbon in the pork marinade.  I have never actually cooked pork so it was fun for me.

IMG_0418 IMG_0435 IMG_0436The pork was served atop the rice and topped with a bourbon and apple jelly glaze. I really liked all of the dinner, especially the pork and swiss chard. IMG_0438We finished off our meal with a bourbon soaked raisin bread pudding with bourbon glaze. I liked the bread pudding but the glaze was to sweet for me.  IMG_0439Overall we had a great time talking with all the other people there and getting some new cooking tips.  One of the cooking tips I hope to take away is how to properly and quickly chop an onion.

My plans for today include sleeping in a little, laundry, gym, studying and hopefully watching the super bowl!  I hope you are all able to enjoy some family and football time today!

  1. It looks like class was great fun, and what better place to use bourbon then in a cooking class in Kentucky. I love the smell of bourbon (and taste) so I would have loved the class.

    • I love to bake too! I think I’m more comfortable baking than cooking, i like following exact recipes. It was fun to get to experiment with just adding what felt right.

    • It was so fun! Ha I didn’t know running on the treadmill vs. outside would effect appetite different. I will have to see if my appetite changes once I can start running outside!

  3. My mom and I went to a cooking class where we made our own pasta, it was awesome. There is a restaurant by me that has a salad with apples on it that I always get. its so good!
