Hi! How is everyones week going so far? Mine is going pretty well, much less hectic than last week. Today is Wednesdays and while I typically share my eats from one day (the same thing a lot of the time) I wanted to share two days of meals. Both Monday and Tuesday I tried to change up my usual eating routine.
Breakfast: Monday was toast with peanut butter, chia seeds and a banana. Tuesday I had another bowl of Arman’s sweet and salty ice cream, recycled picture from Sunday. Both days I also had some hot coffee.
Lunch: Monday I had a salad with leftover salmon and two eggs and Tuesday I had a salad with sweet potato and egg whites. Monday’s eggs were suppose to have been hard boiled but I must not have cooked them long enough, which of course I didn’t find out until I started to peel them.
Dinner: Monday night I had an egg white and cheese scramble with cherry tomatoes, green beans and some costco rice mixture and finished with a late night bag of popcorn. Tuesday night I didn’t get home from class until late so I made an old favorite. A yogurt bowl! I had blueberry greek yogurt with an apple, some dried cherries, chia seeds and dry oats.
Snacks: I forgot to take pictures of snacks as most were eaten at work. Both days I had some almonds, carrots, banana, and roast kabocha. Monday I had a Cadbury chocolate bar with lunch and Tuesday I had two tootsie rolls.
I’m back to the books now! I’ll be excited when this exam is over next week. Grad school while working many hours in the week is a bit tiring and I know I’m already ready for the semester to be over.
